Homemade: Brown Sugar Icecream Cookies AKA Sandwiches

Let me just say that these did not last long. Once I froze them and put them in the freezer for easy access. They were gone! I will surely keep making these and come up with my own cookie mix because these are very sweet and not good on the waistline.


Brown Sugar IceCream Cookies
Yields 6


Ingredients:

1/2 Stick Butter
1 Cup Brown Sugar
1 Egg
2 Tsp Vanilla Extract
1Cup All Purpose Flour
1/2 Tsp Cinnamon
1/2 Tsp Ginger
1/4 Tsp Baking Soda
1/4 Tsp Baking Powder
1/4 Tsp Salt
3 Tab Sugar (for rolling)
Large Mixing Bowl
Wooden Spatcula or Hand Mixer
Parchment Paper
Cookie Sheet
Small Frying Pan
Ice Cream (Your Choice)

Directions:

Melt butter in frying pan and cook till brown. Once butter has browned remove from heat and cool. Go ahead at this point and heat oven to 350. Once cooled mix with brown sugar, egg and vanilla. Once combined add remaing ingredients. Dough will be sticky. Roll into twelve balls and place six on the lined cookie sheet with parchment paper. Cook both sets of cookies for 10-12 minutes. Let cool and place a scoop of icecream in each cookie and place back on pan in freezer for a let a hour to set. Enjoy!

Note:

My cookies only needed 8-9 minutes, plus I wanted them soft. The cookies spread so only cook six at a time.

Taco Soup

This is a favorite around my home and church. There are basically never any leftovers. It is very healthy and great to use for large feedings especially since it is getting cold. You can serve over tortilla chips or with corn muffins/bread.


Yields 10-15 servings

Total Cook/Prep Time 20-30 minutes

Ingredients:

2 cans whole corn (drained)
3 varieties of beans (I use Great Northern, Pinto, Black or Kidney drained)
2 cups Shredded Sharp Cheese
1 pk Taco Mix
1 pk Ranch Dry Salad Mix
2 cups Sour Cream
2 cans Rotel Tomatoes with green peppers
1lb. ground turkey or chicken
Can Opener
Large Pot
Frying Pan
Wooden Spoon

Directions:

Put your meat on to brown. Go ahead and open the corn and beans to drain. Mix your beans, corn, tomatoes, sour cream, cheese, taco mix and ranch mix in your pot on low and stir every few minutes. You basically just want to heat and allow cheese to melt. Once your meat is done drain and add to your pot. Enjoy!

Note: The meat is optional and I have also made the soup with only two kinds of beans. These are the same basic ingredients you use to make tacos.

Blueberry Muffins

Yields 12

Bake 400 20-22 mins

2 Cups Whole Wheat Flour or All Purpose
2 Tsp Baking Soda
1/2 Tsp Salt
1 Tsp Vanilla
2/3 Cup Milk
2 Eggs
1/2 Cup Butter (melted)
1/3 Cup Sugar
1/3 Cup Light Brown Sugar
1 Cup of Blueberries
12 Muffins Wraps

1) Melt butter. Wash blueberries well, sprinkle with flour and sit aside. I add the flour so they won't drop to the bottom of the muffins.

2) Mix flour, baking soda, salt and both sugars. Mix butter, eggs, vanilla and milk.

3) Combine wet and dry mixtures, then fold in blueberries.

4) Fill 12 muffin tins full of mixture in wraps and bake 20-22 minutes. Let cool and enjoy.

Note: These freeze very well just store individually in saran wrap in a freezer bag. Or store in a airtight container in fridge for up to 2 days max. Otherwise they will taste stale. I also sometimes swap the blueberries for a half bag of chocolate chips. If you would the whole bag it would be too much.

Green Beans with Tomatoes and Garlic


I normally make green beans this way or with Turkey pieces minus the tomatoes, garlic and dice my onions instead.

When buying your fresh green beans you can also just blanch them, cool them and freeze for other meals. Enjoy!

2 cups Diced Roma Tomatoes
1 cup Sliced Onions
1 cup Chicken Stock
3 cups Fresh Green Beans
3-4 Fresh Garlic Cloves Minced
2 Tab Olive Oil
1 Tab Nature's Own Seasoning 

1). Saute onions in olive oil 4-6 minutes till translucent in stock pot. Add garlic for about 3-4 minutes.

2). Add chicken stock, nature's own seasoning, tomatoes and green beans.

Note: If you have never cleaned your own green beans they really simple. Snap off each end and pull the sting if there. Chop to size and wash off. I always buy my Nature's Own Seasoning from Walmart, seems to be the only place I have found it.

3). Cook for about 30-40 minutes covered till soft and stir occasionally.

Banana Bread


Yields 1 Loaf

Recipe adapted from Recipe Key

Ingredients:

1 cup All Purpose Flour
1/2 cup Whole Wheat Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
3 Mashed Bananas
2/3 cup Sugar
1 egg
1/3 cup Butter (melted)
1/3 cup Brown Sugar

1) Mix flour, whole wheat flour, baking soda, baking powder and salt in a bowl.

2) Beat Bananas, sugar, egg and melted butter in separate bowl.

3) Combine dry and wet ingredients and pour in greased loaf pan.

Bake on 375 for 1 hour.

Note: You can see from the picture above I doubled the recipe and made two loaves. If your top rack in too close to the broilier the top of the bread will cook faster then the inside. Check on the bread after 40 mins with a cake tester or toothpick to test, if still wet just keep watching. I also always wrap mine in saran wrap and store in freezer bags. Makes it easy for breakfast or a quick snack. Just pop in microwave for about 20-30 seconds from freezer.

Crockpot Applesauce


I had so much fun making this and I look forward to making apple butter soon using the same recipe. This was so easy I will not be buying in store again. Yes, definitely avoiding the yucky preservatives and High Fructose Corn Syrup. Enjoy!

Yields 4 cups

9 cups Chopped and Peeled Apples
1/4 cup sugar or honey
1/2 cup Water
1 tab Lemon Juice

Peel the apples and use an apple core to remove middle and chop the apples.

Cook in crockpot for 4 hours on high. You can add in 1/2 tsp of cinnamon. If you use more than this it may get really strong. Of course each time you make it you can adapt more and more changes. Once apples are soft use an immersion blender or fork and make smooth or chunky.

Store in a jar for up to three weeks in the fridge or freeze in ziploc bags.

Note: Best sweet apples are Red Delicious, Empire, Fuji, Granny Smith or Regent.

Granola Bars


I had so much fun making these and never knew how easy they were. I will next time soak my oats first to make the oats easier to digest and softer. But never the less yummy! Enjoy

Bake at 325 15-20 mins
Yields 20

4 1/2 cups Rolled Oats
1 cup Whole Wheat Flour 
1 tsp Baking Soda
1 tsp Vanilla
1 cup Butter (softened)
1 cup Honey

Homemade Bagels


I can't believe how easy these were to make. If you google homemade bagels there are lots of different recipes and ways to make them. I used the below method and it works well. All you need is flour, water, yeast and salt. Now the next time I make this I will try it with bread flour to see if it gives a more bread like texture. But I think the All Purpose can work just as well.

Banana Muffins with Streusel Topping

Yields 9 muffins
